  1. Yum! Strawberry rhubarb jam and marmalade are both being put on the shelf here…not for sale, just for toast in those long winter months! You guys work hard!!

  2. Love marmalade but have never made it. My only experience is making cherry jam, which I cooked too long and it was hard as a rock the next day and one jar almost exploded. I did get a good laugh out of it though.

    • D > Marmalade is fairly easy to make, because although the ‘headline’ ingredient is the orange, there’s lemon as well, which as well as giving the marmalade the sharpness it needs for taste, it has the pectin to make the marmalade set. Cherry has virtually no pectin, and it would need some adding either as an ‘additive’ or as lemons or perhaps (cooking) apple. The key to getting the set right (and I don’t always – there are disasters even now!) is to test the set at say 5min intervals, with a tea-spoonful on a chilled saucer, left to cool: it should turn jelly-like even when still warm. Better a bit soft than rock hard!
